Since we do not like Thai sweets at all with a bunch of incomprehensible additives (we are talking about flour products), we have to do such things ourselves. Moreover, I still do not eat wheat flour, and rice flour is rife here. The recipe will be useful for those who also do not like Thai sweets, and for those who make similar pies in Russia. Rice cake recipe
For those in Thailand
You will need:
- Rice flour 8 rounded spoons
- 3 eggs
- Butter 100 gr
- Cane sugar 6 tablespoons
- Coconut pulp
- Coconut milk 100-200 gr
- Yogurt 100-200 gr
- You can add soda, but I like it better without it
As you can see, all ingredients are available to anyone in Thailand. It is enough to go to Tesco, and there is something even in 7/11. I'll tell you now.
Rice flour is sold in two flavors, Glutinius and regular, we did both. The only difference is that the Glutinous Rice Flour cake has a sticky dough, somewhat reminiscent of a cheesecake. I personally like ordinary flour better..
Instead of cane sugar, you can use regular sugar. And the amount also depends on how sweet you want the cupcake. We buy yoghurt without fillers in small jars (as in the picture). He is in Tesco and 7/11. But it is better to take real not sweet yogurt (for example, Greek Style), it tastes much more like natural, but it is not everywhere and not always, in our Tesco it is not.
For those who are in Russia
In principle, there will be no problems with finding ingredients, everything is there. Rice flour is sold in large supermarkets and on the internet (for example, in Utkonos). Instead of yogurt, you can safely add sour cream 100-200 grams, instead of cane sugar, ordinary. Do not add coconut milk (sour cream is enough). Snag with only coconut pulp. We'll have to either pick it out of the coconuts from the supermarket (but it's very tough there), or it's easier to buy ready-made coconut flakes right away. Better yet, take the coconut urbech ... It's quite tasty on its own and can be added to cooking. You can also combine urbech + shavings.
Cooking a cupcake
Melt the butter. Mix it with sugar, add eggs, yogurt, coconut milk, coconut and finally flour. We bring all this into a homogeneous mixture until the consistency of jelly is approximately. That is, liquid, but in moderation. And then pour it into the multicooker and set the Cake mode. That, in fact, is all. I wrote longer than all this is done in real life. Just pick out the pulp for a long time :)
